On 4 March 2026 in the Raa Atoll, Ambula at Heritance Aarah, the world’s first Maldivian–Sri Lankan fusion restaurant takes centre stage for a rare, one-night wine-led dining experience, where its culinary philosophy is carried seamlessly from the plate into the glass.
‘An Evening at Ambula – The Organic Wine Dinner’ is built around a six-course menu created specifically to pair with organically cultivated wines from Germany’s Rheingau. Known for its precision, balance, and expressive character, the Rheingau is one of Germany’s most respected wine regions. Its wines favour clarity over excess, offering layered aromatics, mineral-driven structure, and a strong sense of place.
Guiding the experience is Christian Ress, fifth-generation owner of Balthasar Ress, one of Germany’s leading organic wine producers. He shares the philosophy behind organic cultivation, the character of the Rheingau, and the stories that shape each bottle. Alongside him, the Ambula culinary team presents each course, creating a natural dialogue between kitchen and vineyard that feels personal, informed, and unforced.
Throughout the evening, contemporary Maldivian–Sri Lankan flavours are matched course by course with these organic wines, creating pairings that feel considered and harmonious. The freshness of island ingredients meets the elegance of cool-climate vineyards. Spice, texture, and acidity are carefully balanced, allowing both food and wine to elevate one another. Each pairing is introduced table-side, offering insight into how and why the combination works.
